Gluten-Free Onion Quiche


  • 2 cups puffed rice
  • 2 eggs
  • 2 containers of cottage cheese
  • 2 big onions
  • salt and pepper to taste

Preheat oven to 350 degrees (180 celcius). Dice onions. In large skillet, fry the diced onions until transluscent. Remove from heat. In large mxing bowl, mix together all ingredients. Pour into 9X13 sprayed pan. Bake for 1/2 hour.
