Date Cake

Ingredients

  • 1 1/2 cup strong, hot tea
  • 250 g. dates, pitted and diced
  • 1 1/2 cup brown sugar
  • 1/2 cup canola oil
  • 2 teaspoon baking soda
  • 2 eggs, beaten
  • 1 teaspoon orange zest
  • 1 cup whole wheat flour
  • 1 cup white flour

Preheat oven to 350 degrees (180 celcius). Mix dates, brown sugar, oil, and baking soda. Pour hot tea on top of mixture and wait for it to cool. When cool, add eggs, flour and zest. Mix well. Pour in English cake pan and bake for 12 hour.
